Dashi’s October omakase takes inspiration from Okinawa, Japan’s southernmost prefecture and the former home of the Ryukyu Kingdom. The five-course dinner explores ingredients and flavors connected to the islands, from seafood and sea grapes to Okinawan soba, pork, and purple sweet potato.
