My partner and I moved here from New Mexico a few months ago and had been missing the taste of home. We’re so happy to have found this place, the food is amazing and authentic. Can’t wait to see how it develops over time and special shout out to the staff for being so kind!

Tried Hatch Burritos in Durham NC. I really enjoyed the green chile soup. While it was a bit spicy for my taste, it was still very flavorful, especially after adding sour cream, which balanced the heat nicely. The tortilla that came with it was hot and fresh, and I definitely appreciated that. Now, onto the burrito. The flavors were there, but unfortunately it was far too wet. There was an excessive amount of sauce or cheese, which caused the burrito to lose its structure and completely fall apart. I was hoping for a burrito that was more crispy and nicely browned on the outside, but instead, that texture was only present on the inside once I cut it open. When I tried to share it, it completely fell apart, which took away from the overall experience. I’d still recommend giving it a try for yourself, but I’d suggest asking for the burrito with less sauce to avoid it being soggy.

I’m genuinely so happy Hatch Burritos is officially open. I’ve loved them since the pop-up days, and the brick-and-mortar spot somehow feels even better. The food is next-level: incredibly flavorful, super fresh, and consistently high quality. Everything tastes like it was made thoughtfully and minutes ago. The pork belly burrito is my always-order (it’s that. good), and the hatch chili pimento cheese never disappoints. I’m here multiple times a week because it’s just that good. Plus, the staff is kind and welcoming in a way that makes you want to linger (and come back ASAP). Highly recommend.

Great atmosphere, amazing staff, but super mediocre burritos. $14 gets you a small/medium size burrito with under seasoned eggs and meat. I believe this was their soft opening but there is much to be desired. I had the steak and eggs burrito, maybe the sausage one is better. The burrito was soggy and not wrapped well, it was super messy. The steak was dry, tough, and could have been cut into smaller pieces. I really really want to like this place and I’ll definitely try them again but as it stands you can get a better tasting and larger breakfast burrito somewhere else for less. The coffee they had was excellent though and they also had a solid selection of doughnuts available.

This place is a welcome addition to the Durham food scene. They’re still working out some operational bugs, but they are doing it with elegance, honesty, and some damn good food. The sausage breakfast burrito was excellent. I liked it without peppers/onions and extra green chile better than the way it comes normally, but it’s great either way. And then the green chile stew. Wow. One of the best bowls of stew I’ve ever had. Spicy without being painful, hearty without being heavy, immensely flavorful. The whole experience eating it felt gourmet without ever nudging the line of decadence. You can sense the care that went into building this place immediately. The staff is friendly, the aesthetic is clean and seems to hold the balance between minimalism and cultural appreciation well without tokenizing. One suggestion and two preferences, and they are purely personal: - Replace the little cream cup with an insulated carafe - I had to ask for the cream to be refilled both times I visited. No big deal, but it definitely held up the line both times. - Crispy potatoes/papitas option for the burrito. The current potatoes are great and really surprisingly well-cooked (for an ingredient that can easily turn to mush). A crispy texture in there would take the burrito over the top. - Piñon coffee (even though the Little Waves they were brewing was exceptional) Give this place the business it deserves please so I can keep eating their burritos and pretending for 30 minutes that I’m in the Land of Enchantment.
